for the chickens split
them in half and marinate in the red wine, herbs, garlic for 24 hours. remove
the chickens from the marinade , season with salt and pepper and sear until
golden brown, place the red wine, chicken stock, veal stock in a pot and
place the chicken back inside and simmer until cooked through.
