chicken stock

breadcrumb mixture
mix all the ingredients together, season the fish with salt and pepper and brush the fish with eggwash and crust the fish in the mixture.  Place the fish on a sheetpan and roast in a 375 oven until just cooked.

for the rice timbale, sweat the onions, garlic in butter add the rice followed by the rest of the ingredients and simmer covered until just cooked through.
vegetables
marinate the vegetbales and grill them until cooked through.
garnish the plate with tomato concasee, herbs, herb oil and basil oil.
