for the spice crust grind all ingredients together to make a fine mix. roll in the prime rib on all sides and season heavEly, place on top of a bed of mirepoix and roast in a 375F oven until MR. let the meat rest for 20 minutes before slicing.

Garnish
in a small saute pan add the shallots, butter french beans, carrots and herbs and toss to incorporate. Place the potatoes in a piping bag and pipe on the plate.
